1 lb sweet potatoes
3 Tbsp bread crumb
1/2 cup grated parmesan cheese, plus more for serving
1-1/2 cups chopped fresh parsley
Pinch grated nutmeg
3/4 tsp salt
Pinch pepper
1. Heat oven to 400 degrees
2. Bake potatoes until soft, about 1-1/4 hrs
3. Cut potatoes in half, lengthwise and put the halves back
in the still-warm oven for 10 minutes to dry.
4. Peel potatoes and add the flesh to the food processor.
Process until mixture is smooth. 5. Scrape the filling into
a bowl. Stir in 1/4 cup of parmesan, parsley, nutmeg, 1/4
tsp salt and 1/4 tsp pepper. Cool to room temperature.
