PUREE OF ROASTED TOMATO

5 large tomatoes, cut into quarters

2 onions, sliced

12 cloves garlic

1 cup extra virgin olive oil

2 cups V-8 juice

1 Tbsp Kosher salt

1 tsp pepper

1 Tbsp ground thyme

1 Tbsp Worcestershire sauce

1/2 tsp Tabasco sauce

1. Pre-heat oven to 400 degrees
2. Toss tomatoes, onions and garlic in the olive oil
3. Place on a sheet pan and roast in the oven until vegetables begin to caramelize
4. Transfer roasted vegetables to a pot and add V-8 and seasonings and bring to a simmer
5. Remove from heat and puree in batches in a blender and strain back into pot
6. Bring back to simmer and serve
