2 whole chickens cut into
8 pieces, or you can use just the breast
1/4 cup vegetable oil
3 onions, large-dice
5 cloves garlic, chopped
3 green bell peppers, diced
4 cups diced canned tomato, drained
1 1/2 Tbsp turmeric
2 tsp ground cinnamon
1/2 tsp cayenne pepper
1 Tbsp Kosher salt
1 quart chicken stock
4 sweet potato, peeled and diced
1 cup raisins
2 Tbsp fresh ginger, grated
1. Heat vegetable oil and deeply brown chicken on both sides
2. Remove chicken and pour off excess grease, add onions,
peppers and garlic and saute
3. Add turmeric, cinnamon, cayenne pepper, salt and tomatoes
4. Add chicken, sweet potatoes, stock and raisins. Bring
to a simmer
5. Simmer very low stirring occasionally until chicken is
falling off the bone and sweet potatoes are done
6. Stir in ginger and serve
